Following the success of the pop-up restaurant, Ebitt was approached to look at how we could take the offer nationally. We started by defining our demographic and looking at the areas we could appeal to them. Initially looking at experiential opportunities such as summer festivals and events, we developed a much more refined solution than restaurants offer.

Having already had a very strong relationship with several retailers, Waitrose were interested in knowing more about our plans and having seen some of the early designs, offered us an opportunity to take over their juice bars, initially in their Salisbury store with a view to roll out over the country.
